Guacamole Recipe

I love guacamole. My love affair with this delicious dip began when I was pregnant and the only thing I wanted to eat at any given time was salsa and/or guacamole. Sadly, I didn’t know how easy it was to MAKE guacamole at the time and thus my guacamole craving was only satisfied once Crystle made it for me!

That’s totally not my image, by the way. I am way too lazy tonight to take a picture of my guacamole. Plus it’s in a tupperware container and yeah. Presentation’s everything! Without further ado, here is what has evolved into …

Kim’s Guacamole Recipe

  • One avocado (the ingredients below are PER AVOCADO if you’re using more …)
  • 1 tbsp plain yogurt
  • 1 tbsp lime juice
  • 1 clove garlic, crushed, chopped finely, or pressed
  • 1 tbsp chili powder (for kick!) OPTIONAL, but highly recommended!
  • salt and pepper to taste

Peel and pit the avocado. Break it into smaller pieces and stick it in a bowl. Dump the other ingredients in and mash everything together with a fork. If you want it smoother, you can puree the avocado first, but I don’t mind it a little lumpy.

That’s it! Seriously, this takes all of five minutes and it’s just the right amount of guacamole for one person (Brad doesn’t like it … thank goodness!). If you’re using salt-free tortilla chips like I do, you’ll want to add a bit of salt to the dip, but I’ve found that if I’m using regular salted tortilla chips, I don’t need the added salt.

Enjoy! And let me know how you like it :)

Mmmmm … cookies.

I made cookies yesterday.

They are chocolate chip cookies from my new cookbook, Deceptivey Delicious. They. Are. So. Good. If I didn’t tell you, you’d never know there were chick peas in there for added nutrition, and I even substitued one cup of spelt flour to make them even better! Honestly, these cookies are great and I’ll be making them again and again!

I bake! I cook!

I don’t know why I’m always so surprised that I can cook and/or bake. I can read, which seems to be about the only thing required to follow a recipe (I have tried to tell Brad this, but I don’t think he’s buying it!).

These cookies are called Applesauce Oatie Cookies. People, this is the first time in my life I have made cookies from scratch all by myself. And, shockingly, it wasn’t terribly hard! In fact, it was quite similar to opening a package and making them from there, except that I had to round up the dried ingredients myself. Although they taste YUMMY(!), I’m not sure I’ll make them again. They’re REALLY soft - I hear that’s probably because of the applesauce in the recipe - and once you put them in a container, it’s kinda hard to get them apart again.

This was dinner earlier this week - Pureed Baby Food Soup with a delcious salad with homemade Apple Vinaigrette dressing and cornbread muffins. The soup was made on the advice of my friend, Sarah, who suggested I use the pureed baby foods I’ve been saving for Gwen in a soup. Although I’m pretty sure she more meant throw in a cube or two with your next batch of soup, I took it to a whole new level and used pretty much all of the cubes and threw them in the crockpot with some basil, vegetable stock, garlic, onion, and other spices. It was surprisingly yummy :) The cornbread muffins came from Crystle’s cook book, so I don’t have the recipe for those.

Tada!

Website!!

Brad is currently working on a photo sharing piece for our website so we can put up a tonne of pictures of Gwen and it can be easily accessed. It’ll be password protected, so as long as you’re a friend, you can have the password and see our pictures! This here blog will be eventually migrating over there too - it’ll still be a Wordpress blog, but it’ll be a .org one instead of a .com - hosted on our website. I’m excited that it’s actually getting on it’s way. Brad’s also programming me a recipe/grocery program too, so I can have all my recipes online and click them and it’ll print out the groceries needed for the specific recipes. Cool, huh?
